Our “Ingrassaporci” (Hipochoerys Radicata) vegan and gluten free recipe, is a wild herb of the chicory family, so called because wild boars are greedy for its roots..but the names in dialect along the peninsula are countless (piattone, donkey ribs..)

Here in our field at the Circeo it is one of the most present herbs, for almost the whole year (apart from a small summer break). It was collected and used in local kitchens until after World War II.

This herb with its delicate bittersweet flavour (also thanks to our spicy recipe) is perfect for any kind of sandwich, or to combine with legumes (as in a famous Puglia recipe) with ham or meat, to crear great and peculiar appetizers or second dishes..

- Ingrassaporci Selvatica - hypochoeris radicata (Alchimie di Circe - Circeo), - Olio EVO (Olio Flaminio - Trevi PG), - Aceto di mele Bio (Piemonte), - Sale integrale (Sicilia), and - Spezie naturali (Alchimie di Circe - Circeo)

Pairings

- Antipasti: bruschetta, affettati (porchetta, prosciutto), acciughe, pesce marinato, insalata di mare
- Primi: perfetta per paste in bianco, pizze in bianco, riso saltato
- Secondi: Da provare la crema di fave e cicoria alla pugliese, sostituendo la cicoria con la nostra Ingrassaporci, bistecche e secondi di carne, verdure (zucchine, peperoni, melanzane, pomodori ripieni)
