'Portulaca Oleracea' , known in Italy with innumerable dialectal names , such as Erba dei Porci , is a succulent summer wild Mediterranean herb, with small round leaves and a tender, reddish stem. Although it has lost its use since the post-war period, and it is one of the most spontaneous plants eradicated from Italian gardens, purslane is by far the richest plant in linoleic acid (omega3) . It is also an excellent source of Potassium and a good source of Sodium, Magnesium, Calcium and Vitamin C.


Excellent in salads, we offer it in a 'giardiniera' style, a typical way of preparation from north Italian region 'Piemonte', tasty and floral, with our trusty Flaminio EVO Oil (Trevi-PG) which rounds off its flavour, perfect for the preparation of appetizers , bruschetta , such as those in the photo with sautéed chanterelle mushrooms and saffron petal chips on home-made wholemeal naturally leavened bread, or to accompany cold cuts of meat (especially pork, as the dialectal name 'herb of pigs' suggests

 

Like all of our ingredients, it is designed to stimulate the imagination in the kitchen ... as in the case of our crouton with buffalo butter and marinated anchovies from Terracina, in which purslane adds an unexpected, fresh and fruity note .

Conservation tips

Keep away from sunlight in the pantry, once opened it can be kept for up to 1 week in the fridge with a closed jar
