Our beloved Circeo saffron, grown here by us only with permaculture techniques and natural agriculture ( no chemical fertilizers, no herbicides and pesticides).
The 0.5 g jar of pure saffron in dried stigmas is perfect for 10/12 portions , to be soaked in water if the recipe requires it or to be toasted for 2 minutes at 50/60 degrees in the oven (wrapped in parchment paper)
The saffron here at the Circeo blooms between the end of October and November, during the warm and sunny autumn days. Every morning between 10 and 11, when the morning dew has dried, we collect the precious flowers for more than a month. Immediately after, the second phase takes place, the brushing, which we carry out during the day, to better preserve each property, carefully separating the petals from the precious scarlet red stigmas (not the pistils as many believe they are a waste product). Lastly, at the end of each day, we dry them in the laboratory. The operation never exceeds 40 degrees centigrade in order not to deteriorate the organoleptic and nutritional qualities of the Crocus Sativus (scientific name of Saffron)
The field stands at the foot of Monte Circeo , close to the National Park , where it is possible to admire the flowering of wild saffron on the mountain in autumn, the same flower, the same color but slightly different stigmas and not exactly sativas (scented).
On the same land we have built an artisan laboratory ( Alchimie di Circe ) to transform our ingredients and experiment with ever new combinations and recipes with saffron and the other products of the company.
