    because we believe that the rules of agriculture and food need to be rewritten. On our land we apply permaculture and intercropping techniques to encourage biodiversity and the development of the plants' natural defenses.
    We adhere to the principles of the nascent AgroEcology, trying to recover ancient varieties of fruit and vegetables, enhancing wild herbs and promoting the use of the most nutritious whole grains.

    because in our laboratory we work with our freshly harvested ingredients, taking inspiration from the peasant tradition but with a nod to oriental cuisine, vegan cuisine and healthy cooking.
